This tasty condiment is sometimes called aioli in recent years, however, true aioli is garlic and olive oil emulsified. Use this recipe to serve with chicken, fish, steamed veggies, and fries. It’s great for sandwiches and salads, too. It can be customized easily with spices like smoked paprika.

1 egg or ¼ cup liquid whole eggs
2 tablespoons apple cider vinegar or lemon juice
½ teaspoon salt
4 cloves of garlic (optional)
1 cup light olive oil (measured separately)

In a tall glass like a mason jar (if using an immersion blender) or a blender, add the egg, apple cider vinegar, salt, and garlic.
Begin blending the ingredients. While blending, very slowly pour in the olive oil until is reaches the desired consistency.
Store in the fridge for up to 1 week using a pasteurized egg.
