Easy twist on a traditional recipe—just bake the egg frittata!
Make it for your crew with any meat or sub, different veggies (may need to sauté first), and cheeses that they like. Use your leftovers!
It’s an easy recipe for breakfast, lunch, dinner, and meal prep.
ingredients
12 large eggs
¼ cup heavy cream
Kosher salt and freshly ground pepper
1 cup shredded cooked turkey, chicken or other meat
1 cup baby spinach
6 slices cooked bacon, broken into pieces
1 ½ cup shredded Swiss cheese, divided
Dijon mustard and mayonnaise, for serving
8 to 16 slices toasted bread (optional)

Preheat the oven to 400° F with a rack in the center of the oven.
Butter / grease a 9 x 13-inch baking dish.
In a large bowl, whisk together eggs, cream, 3/4 teaspoon salt, and 1/4 teaspoon pepper.
Stir in the meat, spinach, half the bacon pieces, and 3/4 cup cheese.
Pour into the prepared 9 x 13-inch baking dish.
Sprinkle the remaining half of bacon pieces and 3/4 cup cheese.
Bake until set, ~15 minutes.
Switch oven to broil and cook until browned in places, ~ 2-3 minutes.
Slice frittata into 8 rectangles.
Serve alone, between toast slices or on a single piece of toast.
It’s delicious with Dijonnaise, sriracha or other sauces.
