1 lb. large whole carrots, peeled
1/8 cup olive oil (more if needed) or use olive oil spray
kosher salt
Freshly ground black pepper
glaze (optional)
1/4 cup balsamic vinegar
1/4 cup honey
OR
Balsamic glaze
garnish (optional)
fresh chopped parsley
roast it!
Preheat the oven to 400° F.
On a large baking sheet, drizzle or spray carrots with oil, then season with salt and pepper.
Toss until combined.
Bake until carrots are tender, approximately 20 minutes. Roasting time depends on the size of the carrots.
While the carrots are roasting, combine the balsamic vinegar and honey in a small saucepan. Simmer until reduced by half, stirring occasionally, 15 minutes (the mixture should coat the back of a spoon).
Let cool slightly.
Drizzle the glaze over the roasted carrots.
Taste and adjust seasoning, if desired.
