12 6-inch corn tortillas
olive or vegetable oil – spray works well or just enough oil to baste tortillas
1 lb lean ground beef
½ cup sweet onion, diced
1 packet taco seasoning (or 3 tablespoons homemade)
1 16-ounce can refried beans
2 cups shredded cheddar cheese or a combo with monterey jack, pepper jack, etc.

black olives, sliced
jalapeño pepper, sliced thin
green onions, chopped

Spray or baste each side of the corn tortillas with oil. In a skillet over medium-high heat, lightly pan fry each corn tortilla until golden and slightly crisp on both sides. Remove tortillas to a paper towel or baking rack.
Brown ground beef, crumbling it into small pieces as it cooks. Add diced onion halfway through the browning process. Remove the grease.
Add the taco seasoning and stir to combine.
Warm the refried beans in the microwave or cooktop. Spread refried beans on 6 tortillas and top tortillas evenly with taco meat.
Sprinkle cheese over the meat and place a second corn tortilla on top.
Place the little pizzas on a parchment lined baking sheet.
Top each pizza with remaining cheese, tomatoes, black olives, jalapeño pepper slices, green onion.
Bake at 400° F for about 7-10 minutes, until the cheese is melted.
Cut into wedges to serve with sour cream and salsa.
