1 cup vegetable oil
2 eggs
2 cups sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons cinnamon + a pinch of nutmeg
1 teaspoon baking soda
½ teaspoon salt
4-5 apples – peeled, cored and diced – ~¼ inch cubes
(I use Gala apples, but I imagine others work well, too. If they are small apples, I use five. If the apples are large, sometimes four is enough)

bake it!
Preheat the oven to 350° F.
Grease and flour a 9×13-inch cake pan. I like to use a Bundt pan.
Beat oil and eggs in a large mixing bowl with an electric mixer. Add the sugar and vanilla and mix well.
In a separate bowl or food storage bag, combine the flour, cinnamon, baking soda, and salt.
Add the flour mixture to egg mixture and mix until combined.
Fold in apples by hand using a stiff spoon. Spread the thick batter into the prepared pan.
Bake the cake until a toothpick inserted into the center comes out clean, about 45 minutes. If using a Bundt pan, bake for 55 minutes.
Cool cake on a wire rack.
Dust with powdered sugar before serving.
