2 cups baby spinach, stems removed and torn into small pieces
2 cups liquid egg whites
garlic powder
Italian seasoning
9-12 grape tomatoes, cut in half
salt and pepper to taste
bake it!
Set oven to 350° F.
Grease a 6-cup muffin tin or use a silicone muffin pan. Note baking times below for regular sized-cups or jumbo cups.
Divide the torn spinach equally across 6 cups.
Sprinkle each cup with garlic powder and Italian seasoning.
Pour egg whites in each cup and place tomatoes on top.
Add salt and pepper if desired.
Bake for 15 minutes (regular-sized muffin cups) or 30-32 minutes (jumbo-sized muffin cups). Bake until the egg whites have set.
