1 egg
1 cup all purpose or whole wheat flour
¾ cup milk or alternative milk
1 tablespoon white or brown sugar
2 tablespoons vegetable oil
1 tablespoon baking powder
¼ teaspoon salt
Margarine, butter or shortening
make it!
Beat egg with a hand beater in a medium bowl until fluffy. Oftentimes, I just use a whisk.
Beat in (or whisk in) remaining ingredients except the margarine just until smooth.
Add 1-2 additional tablespoons of milk for thinner pancakes.
Heat griddle to 375° F and grease if necessary.
Pour ~¼ cup batter for each pancake onto the hot griddle.
Cook until pancakes are puffed up and starting to dry on the edges.
Turn pancakes over and cook until lightly golden brown.
