1 large red onion, thinly sliced
¾ cup apple cider vinegar
1 ½ tablespoon granulated sugar
2 ¼ teaspoons salt
1 ½ cups hot water (I just microwave it until hot)

Thinly slice the red onion using a mandoline slicer or a sharp knife.
Place the red onion slices in two small mason jars (pictured above), a large mason jar or a bowl with a cover.
In a liquid measuring cup, combine apple cider vinegar, salt, sugar, and warm water. Stir well.
Pour the liquid mixture over the onion slices so they are completely covered with liquid. Let the onions sit at room temperature for an hour.
Cover and store in the fridge for up to three weeks.
