2 medium-sized sweet potatoes
2 ½ Tablespoons olive oil
2 teaspoons coarse salt
1 teaspoon black pepper
1-2 teaspoons cayenne pepper (depending on your preference)
Preheat oven to 375 F.
Grease a baking sheet or use parchment paper
Scrub and rinse the sweet potatoes, then dry them with a paper towel.
Cut the potatoes into one-inch cubes. Place all the cubes into a large bowl.
Drizzle the olive oil over the sweet potatoes. Add the salt, black pepper, and cayenne pepper. Stir to coat well. Add extra olive oil if needed.
Transfer the sweet potato cubes onto the greased baking sheet.
Bake at 375 for approximately 40 minutes, turning the cubes halfway through the baking time. Depending on the size of the cubes, the cooking time may need to be adjusted. Check for doneness (fork tender) when the edges turn golden brown.
