4 pound Certified Angus Beef Top Round Roast
3 tablespoons Italian seasoning
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
1 teaspoon coarsely ground black pepper
1 teaspoon dry mustard
Preheat oven to 450° F.
Combine all of the spices in a small bowl. Crush with a pestle (food storage bag and rolling pin works, too).
Rub the meat with the spices.
Place the roast on a wire rack inside a shallow baking dish.
Bake for 15 minutes at 450° F.
Reduce the oven to 325° F and bake for an hour or until an instant read thermometer reads 135 to 140° F.
Remove from the oven and tent with tin foil for 15 minutes.
Slice the roast in very thin pieces and serve.
